1/27/2016 90-A 1. Black potato residue observed on potato puncher. Build-up was very heavy. Employee took puncher apart & thoroughly cleaned & sanitized it during inspection.

2. Observed bulk containers of flour & salt that were not labeled. These items must be labeled.

3. Grease/food buildup observed on shelving & equipment throughout kitchen. Establish and maintain cleaning schedule.

4. Heavy soil & grease accumulation on floors and walls under & around equipment. Heavy food waste buildup in floor drains. Establish cleaning schedule to maintain facility.
7/7/2015 91-A 1. Sanitizer for ware washing at 0-10 ppm chlorine. Must be 50-100 ppm. The 3 comp sink was set up to sanitize until the machine could be repaired.

2. Observed a bag of sugar with discolored packaging. No employees knew the source of contamination. The sugar was discarded. Ensure that food is stored so that it is protected.

3. No test strips available for testing sanitizer. Obtain chlorine test strips for machine and quat strips for the 3 comp sink. A few test strips were given to the manager.

4. The floor, especially by the ice machine and under the front service line, has dirt and debris. Clean the floor.
1/26/2015 91-A Improper cooling. Observed wings from previous day at 47-49F in a very large container in the walk-in cooler. To properly cool, the wings must get from 135 - 41F within 6 hours. The wings were discarded. Use shallow pans to cool the wings to 41F, then place in the large container for storage.
